Hazard Analysis and Critical Control Point (HACCP) has been the fundamental of many food safety systems over years. Recently, the Codex Alimentarius (Codex) has released the update of Codes of Practice relating HACCP (i.e. General Principles of Food Hygiene CXC 1-1969) for the first time in 18 years.

Jackson Tsang has over 10 years of experience in quality assurance in the food industry including auditing and training. Currently, he is working as an auditor in SGS Hong Kong and is IRCA Certificated FSMS Lead Auditor. He is responsible for auditing food hygiene programs, second party schemes, as well as third party, recognized standards including GMP, Codex HACCP, ISO 22000, GFSI scheme (FSSC 22000, BRCGS Food, BRCGS S&D) and MSC/ASC Chain of Custody. He got extensive audit experiences across different sectors including hotel, catering, trading, warehousing and central food processing. Moreover, he is used to providing training on PCHF, ISO 22000, Codex HACCP, food hygiene and MSC/ASC Chain of Custody.
